Yuquitas day

In an attempt to become as self-sustainable as possible, we took Saturday to make yucca chips a.k.a YUQUITAS. For those who are not familiar with yucca, it is a tuberous root, very similar to a potato but way more starchy. It looks just like this


Yucca grows extensively in our property with minimal care. So we took these straight out of the jungle to make chips as a snack for the kids. Since the yucca grows abundantly and we don't add any preservatives, we were able to make 30 bags of chips at a fraction of the cost.
All it took, was a full time volunteer, two helpers, a lot of coffee and a whole bunch of oil to successfully finish our mission (just to clarify, the coffee was not for the chips... the volunteers didn't exactly work for free)






After much deliberation, we decided to name the finished product "yuquitas las toritas" in honor of  a former volunteer and friend Eva Maria.
